Why baking conversions matter more than cooking ones

Swapping cups for grams matters far more in baking than in general cooking. A cup of flour can weigh anywhere from 120g to 150g depending on how it's scooped — that's up to a 25% difference, which is enough to change a cake's texture. Baking is a more precise chemical process than most cooking, which is why professional bakers weigh ingredients rather than using cup measures. If a recipe gives weights, use them — if it only gives cups, this converter gets you close, but scooping technique still introduces variance.
